Ashbolt Farm
Ashbolt Farm’s Plenty Road cool climate extra virgin olive oil is grown, pressed & bottled in Tasmania’s Derwent Valley.
Under the custodianship of the Ashbolt family since 1906, Ashbolt Farm is nurtured directly from the Derwent River, surrounded by rolling hills & rugged mountain ranges.
The grove’s orientation, soil, topography & rainfall provide a unique microclimate giving Ashbolt Farm products a distinctive superb flavour profile.
The Rockwall menu pairs warm Manna Bakery bread with emerald hued Ashbolt olive oil & balsamic, a simple, perfect way to start.
Paddock-bred Scottsdale Pork raised on rural farmlands just out of Scottsdale, in the Cuckoo Valley at the base of the picturesque Scott Ranges.
Scottsdale Pork farms are fed by pure spring water running in the Forester River.

Clucking Good Free Range Eggs
Free range eggs from Clucking Good Eggs a family run farm located in the town of Maydena, pinched between Mount Field National Park and Southwest National Park.
The hyline chickens are raised by the family from day one and reside in custom made moveable chicken caravans.
Cape Grim Beef
Cape Grim in the far northwest corner, shaped by wild Southern Ocean swells, abundant rainfall has the cleanest air in the world.
This collective of beef farmers throughout Tasmania, King and Flinders Islands, have a commitment to ethical practices.
They nurture the finest quality grass fed cattle, without harming the pristine environment.

Hazelnuts from Hazelnuts Tasmania - a small grove of some 600 hazelnut trees on fertile soils just outside of Longford in Northern Tasmania.
Owners Lisa and Bruce harvest, crack, roast & package on site. The premium hazelnuts are sold direct from the grove.

Ice cream from Van Diemens Land Creamery.
Crafted in Tasmania’s North West, Van Diemens Land Creamery creates premium ice cream and gelato using fresh, organic milk sourced from a local dairy. Every flavour is made with care in small, controlled batches to preserve texture and purity. From classics like Vanilla Bean and Salted Caramel to distinctly Tasmanian flavours such as Pepperberry & Leatherwood Honey, each scoop reflects the island’s natural quality and character. Coaldale Walnuts
Coaldale Walnuts is a family business based near Richmond in Tasmania. They grow Chandler and Franquette walnut varieties in the deep alluvial soils on the banks of the Coal River, embracing regenerative farming principles to produce high-quality and delicious walnuts and pickled walnuts.
Merroir is a term used to describe how an oyster's flavor, texture, and size are shaped by its marine environment, similar to how "terroir" describes a wine's origin. It is derived from the French word for "sea" (mer) and is influenced by factors like water salinity, mineral content, and the types of plankton and algae the oyster consumes. This means the same species of oyster can taste different depending on where it was grown.
